Banana-Cinnamon Arepas

Arepas are a delicious treat in Costa Rica that go very well with afternoon cafecito – "coffee break." They are easy to make, similar to pancakes, and are relatively healthy.

Banana-Cinnamon Arepas
3 large eggs
2 C. milk
3 C. flour
1 Tbsp. baking soda
3 tsp. cinnamon
3 ripe bananas, mashed

Beat eggs and milk until frothy. In a separate bowl blend together flour, baking soda, and cinnamon. Gradually add flour mixture to eggs and milk. Mix well until well blended. Mash bananas in a separate bowl and add to batter. Mix well.

Heat saute pan with splash of olive oil or non-stick spray until a drop of batter sizzles in the pan. Drop pancake-size portions of batter into pan and flip once. Serve
